Here is a yummy snack idea.
A few weeks ago I was at my friend, Catherine's house and she had this delicious, healthy, trail mix... that she made. I loved it so much, I went to the store, bought the ingredients and whipped it up. My entire family loves it!
- Raw Almond
- Raw pepitas (pumpkin seeds)
- Dried Cranberries
- Raw or salted Sunflower seeds
Mix the ingredients together and store in a glass container. I like to store ours in our refrigerator for a nice cold snack.
Why is this a healthy trail mix?
Almonds are packed full of nutrition. There are considered a complete protein and are a good source of folate. So they are a perfect 1st trimester food. They are also rich in Vitamin E and calcium. Almonds help fight heart disease and may fight cancer.
Pepitas (pumpkin seeds) are nutrient dense. They are a good source of minerals like calcium, zinc, magnesium, potassium, and phosphorus. They are high in most of the B vitamins, and vitamins C, D, E, and K. They are rich in beta carotene which gets converted to Vitamin A. Which helps keep eyes healthy. Did you know that, one handful of pepitas equals 9 grams of protein!
Cranberries are known to treat bladder and urinary tract infections. Dried cranberries contain vitamin C and antioxidants that help fight free radicals. However be careful of the added sugar to dried cranberries.
Sunflower seeds are rich in protein and fiber. They contain a potent antioxidant team of selenium and Vitamin E! They are a good source of Folate! They are also a good source of many important minerals like, calcium, iron, magnesium, zinc, manganese, selenium and copper. Studies show the can help lower cholesterol and may lower heart disease.
Add them to:
Your warm morning oatmeal
Organic, plain Greek yogurt with fresh berries and a little raw honey
Your lunch box
It's the perfect on-the-go snack! And perfect for long flights!
For a variation
Add hemp seeds to the mix for a crunchy alternative.
Hemp seeds contain all 20 essential amino acids and have the perfect ratio of essential fatty acids so it is a great source of omegas for mom and baby. Hemp seeds are easy to digest and are rich in magnesium, iron, potassium, vitamin E and fiber.
Don't worry, you won't get high from hemp seeds.
